How to Make to the Perfect Breakfast Taco


Breakfast of Champions-You always hear or see different variations of a "breakfast of champions". The truth is, whatever satisfies your stomach and makes you yell in triumph because you've achieved the ultimate meal to start off your day, is the breakfast of the champion within you. In my case the perfect breakfast taco is what helps me achieve the start to a great day. 

Taco Love-Now, there are many versions of breakfast tacos but I believe which ever one you choose you must make it with fresh ingredients and love. Enjoy what your doing in the moment to have more fun with it and the quality will follow. It brings me a lot of pleasure when I cook love and watch as the person I serve it to bite into it and feel the love. 

Few Tips
Before we get into making the perfect simple breakfast taco let me tell you a few simple tips to make sure you have what you need and things you shouldn't worry about.

1-Picking your Juevos(eggs)- I’m always a fan of cage-free brown eggs — or even pasture-raised eggs, if you can find those. If you don’t know the difference, study up. You’ll probably pay more for them, but they’ll make up for it in taste. And you can rest easy knowing how the chicken was raised.


2-Be smart about your tortilla choices- Now I normally recommend corn tortilla for tacos but for this kind of tacos I recommend flour unless your eating at my house then flour tortillas are forbidden. Flour tortilla will cradle the eggs better.Try to find a par-cooked or raw tortilla. They take a little longer to cook, but those tend to taste fresher than something you buy off the shelf. You can usually find them in the freezer or refrigerated section. El Milagro is a good brand.
3-Can't handle the heat- Depending on what part of the country your from the level of spiciness will differ and is an over stated stereotype. Your breakfast tacos don't need a spicy factor added to it but if you do chose a chunky mild salsa for taste and texture than that would be okay. An appropriate amount of jalapenos peppers is fine but remember the main the focus here is the eggs, tortilla and chorizo.

Ingredients
4 par-cooked or raw flour tortillas (frozen or refrigerated)

8 large cage-free/free-range eggs

8 ounces chorizo sausage

1 cup shredded cheddar jack cheese
Directions
Prep tortillas according to package instructions. Set aside to keep warm.

Whisk eight eggs until the whites and yolks are fully incorporated. Season with salt and pepper.

Heat a large skillet over medium-high heat and add chorizo. Sauté, breaking up with a spatula or spoon, until cooked through (about 5 minutes).

Add scrambled eggs and continue to stir until eggs are set, 1 to 2 minutes.

Portion into prepared tortillas and top with shredded cheese.

Birthday Blindside

-- It was a sunny cool temperature day in San Diego and I remember listening to Santeria by Sublime on the radio as we drove south on the Interstate 5 freeway. My friend Nathan had told me that we were on going to a Polish picnic in Mission Bay and that there would games so I should wear shorts.
