Tacos Nations

Taco'ing to Strangers

CEDAR CITY, Utah --This past Tuesday, I gathered a diverse group of student with different cultural background to experience one of Cedar City's best local Mexican restaurants called Lupitas.

One of the best things about SUU is the cultural diversity that gives this place a worldly energy. A place that no matter your cultural background you can find your place among caring and supportive community members. If just for a moment you feel lost, there is someone their to walk this new path with you and guide you. Its part of the reason I chose Taco Tuesday as a way to guide anyone who walking alone in the unknown to a place of the known.

At first Taco Tuesday was just another reason to eat tacos like Cinco De Mayo or Quinceneras. It was a reason to meet up with friends and spend pocket change on delicious tacos. Even though Taco Tuesday has a catchy ring to it and that would be the preferred day to grab some tacos but a lot of people have busy work days on Tuesdays. So bringing the concept of tacos to a whole other level by just making it reason to meet up expands the idea of tacos. When people hear tacos they hear snack size food that doesn't take much effort. So go grab one today.

It's not a five star restaurant that requires fancy attire or intellectual conversation. Instead you can be hunched over your table biting into a carne asada taco while listening to them talk about donating plasma at Grifols the local donating center. Yummy! right?

Recently a group of students from different backgrounds joined together at Lupitas to enjoy the company of others while eating delicious food. Now you see not everyone ordered tacos but the idea was to get people together from different lifestyles with the intention to find out new things about each other or to just simply catch up. We had the Valedictorian Jason, the Tech Savvy Genius Ian, the Photographer Stephanie, Students Representative Dom and the turtle loving Alyssa. All of different races and religious backgrounds. As I sat and looked around me I enjoyed watching the happy expressions on everyone faces, the laughter that followed and finally the satisfaction of their first bite. The energy was so positive we could charge up a Prius. It's moments like these I wish would never end. It's the sense of belonging everyone looks for whether they realize it or not.

What I'm getting at, is that a lot of people have a  problem meeting new people in a new town so my advice is begin a trend that many people are not familiar with and blow it up. Stand behind it and embrace it. If your a fan of wings, get the wheels turning with " Wing Wednesday" or for beer lovers "Thirsty Thursday"is the way to go but whatever it is make sure your actually enjoy it and believe everything you say about it.

Never think your alone. Just remember, when in doubt just ask someone out for tacos and most likely they'll say yes.

Learn to Taco About It

Learn To Create Simple Delicious Tacos One Taco Night - It began as a normal night in Mareno Valley California, with nine of us arguing about what we should have for dinner. You heard pizza in one corner and burgers in the other corner. As I started looking through the fridge I immediately saw the answer to the our problems. A pack of yellow organic tortillas, staring at me right in the face. I just smiled back, as ideas began turning in my head. What kind of meat would we cook?, does this fridge also have salsa, were there vegetables? if so  what kind? It would seem as a trip to the grocery store was in place. Everyone still did't know what was going on but as I started to leave I simply turned back and said "tacos" No Experience Need- It doesn't take a fancy culinary degree to put together creative tacos ideas that manifest in your head. I recommend you lead from stomach and listen to what it is trying to say. Although I suggest you don't begin thi

Let's Taco It Down South

Tacos From the South -- They say that the closer you get to the boarder down south the better the food tastes. I would agree, the ingredients carry more of a natural aspect about it that hasn't been manipulated. Most of the peppers as picked right from the backyard and put straight into the salsas. This will carry into the topic I want to discuss today which is the Mania of tacos from Mexico. The Rule of Three - Just like the mariachi bands that usually come in three, when you order tacos in mexico you usually order them in 3's. For starters it makes the taqueros job easier and secondly you fight the temptation of eating more then you have to. Needless to say if you look at the taco belly's of many Mexicans its safe to say that 3 rule doesn't work. The primary reason that tacos in Mexico traditionally come in threes is because of the size of tacos. Unlike tacos you see in the states, Mexican streets tacos come in smaller size tortillas so it makes it tough t

Biggest Problem in College Sports

CEDAR CITY, Utah -- Every college athletes wants to get paid and so do the coaches. Over this last year cases have come to light regarding college coaches taking back channels payments from sports apparel companies in order to secure the attendance of top tier high school athletes. Now more than ever every college is looking to get recognized and increase their attendance number in order to achieve revenue. We got Appalache State finally breaking the top 25 rankings in college football but what did they really do to get their behind closed doors. Aside from coaches getting paid, the NCAA cracks down on college students athletes trying to start their own business without using their school as a marketing launch point when instead they should be focusing on the employees hired to take care of these students and help them succeed and not having them facing criminal charges. Corruption has obliterated academic standards inn order to keep under performing athletes in at school. Some ath
