EL Taco Tamer-My skin may brown but don't get it twisted. You can say the first part of my life was the stereotype of an immigrant that came here from Mexico. My family was homeless for the first four years of my life, so finding food was always challenge. Don't start crying now because surviving that part of my life was just the beginning of my struggles. On paper my name is Nestor Zapata but you can call me El Taco Tamer. I was born in Villermosa, Mexico but I was raised in Oceanside, California. Despite struggling to find food, tacos was never out of the questions when we had the ingredients to make tortillas because you could all sorts of tacos as along as you had tortillas. As a matter of fact those first years of my life consisted of rabbit and squirrel tacos because that was the only available protein around our tent in the forest. Besides tacos playing a role in American culture its has been a vital part of my life and a major contribution to my chubby ways. The decades of experience I have being around tacos has given me skills to create a wide range of different tacos to satisfy every person of every corner this country. Now I would like to share my knowledge and inspire others to become taqueros like myself.

Los Basics- Think of streets and how small they are in comparison to the neighboring lands. Well these snack size tacos are similar when it comes to the evolving style of tacos birthing every day and play an important role in keeping the infrastructure of said neighborhoods in tact. That glue that holds these delicious ingredients together is the tortilla. Something made of such simple ingredients yet can be assembled in different ways and have many combinations of flavors and texture punch every one of your taste buds. The flour is a very delicate factor of this amazing creation that it starts with the temperature that you must keep it at. A few degrees north or south can make the difference between a Taco Bell Gordita or my uncles “chancla”, it means sandal. Once you’ve successfully create the perfect bed to which lay your ingredients you must know how to cook it. This part is just as important as the type of meat you choose to put in your taco because it gives support to the relationship of whatever you choose to put in your creation. A simple coating of butter or olive oil on the tortilla before you put i on the pan changes the richness of the whole taco. If cooked just right it will you the best crisp this world has ever heard. Now if you really want to add more dynamic to your tortilla, try melting a thin layer of aged mozzarella to the main side of the tortilla and wait until you see a light brown color before you pull it. The meat you choose is like the boxing main event, its going to carry the most attention and pack the most punch. Much like the process of the tortilla the meat must also be a the correct temperature so you achieve the perfect tenderness of the meat and it doesn’t overwhelm the rest of his mates on this tortilla boat. Some meats require less seasoning than others like shredded chicken will need just the right amount of pepper, paprika, and lemon juice to give it a zest that will mate well creme fresh cilantro sauce topped with some Cotija cheese. Anyways I'm getting ahead of myself but you can see now how some simple tweaks to the the meats you choose will determine the sauce you match it with. Finally the the toppings you choose to put on your meat can be assorted and many ways so have some fun with it. Since a lot of veggies are universal the ones you choose to put on your tacos depends on you so really can't go wrong. Some vegetables like mushrooms compliment many meats specifically carne aside. You can rumble both ingredients in a bowl of light garlic and worsestershire sauce to create an Asian style flavor. Look, in the end you can have knowledge about every ingredient known to man and still lose sleep over what combination you can come up with next.

A Peso Earned-Although all of this sounds like just mere dinners idea for you and your family for years to come there is the business side of this. If you find yourself in Southern California in the heart of Downtown San Diego you will discover this intense energy of Hispanic culture radiating from many restaurants nearby. The atmosphere around includes places with open seating in a exposed style for the world to see you drinking a cold lager with a friend while sharing a basket of perfectly seasoned corn tortilla chips with salsa. All while anticipating the arrival of some mouth watering street tacos. It is a scene that will never go out of style and keep patrons coming back for more. In the long run the economic aspect of tacos can be beneficial, so follow me along this culinary journey of tacos to discover the the personal and financial gains of being part of the cookery culture.

Let's Taco It Down South

Tacos From the South -- They say that the closer you get to the boarder down south the better the food tastes. This will carry into the topic I want to discuss today which is the Mania of tacos from Mexico. The Rule of Three - Just like the mariachi bands that usually come in three, when you order tacos in mexico you usually order them in 3's. For starters it makes the taqueros job easier and secondly you fight the temptation of eating more then you have to. Needless to say if you look at the taco belly's of many Mexicans its safe to say that 3 rule doesn't work. The primary reason that tacos in Mexico traditionally come in threes is because of the size of tacos. Unlike tacos you see in the states, Mexican streets tacos come in smaller size tortillas so it makes it tough t
