Reckless Ron

You have your fat coach who cusses a lot and seems like he might have a heart attack, then you have your medium build coach who could've gone pro and but didn't and now takes all his frustration out on the team reminding everyone of his glory days. Finally you have the coach that doesn't know anything about the sport and the position happened to land on his lap because he played one season of J.V football. I was lucky enough to have a combination of all three. His name was Ron Singlar and he wasn't entirely fat but he did have a retirement belly, he always talked about his glory days along with his prion days which made matter worst and this position did land on his lap but not for the previous reasons I mentioned. Coach Ron was my wrestling coach in high school, he a loud mouth and always spoke his mind which usually got us in trouble at tournaments. The reason he was my favorite coach was because he was passionate and gave us everything he had as a coach. Sometimes he crossed the line but we knew he just wanted us to win. Not only was he my coach but he was family to me. I've never seen a coach dedicate himself like Ron did.

Learn to Taco About It

Learn To Create Simple Delicious Tacos One Taco Night - It began as a normal night in Mareno Valley California, with nine of us arguing about what we should have for dinner. You heard pizza in one corner and burgers in the other corner. As I started looking through the fridge I immediately saw the answer to the our problems. A pack of yellow organic tortillas, staring at me right in the face. I just smiled back, as ideas began turning in my head. What kind of meat would we cook?, does this fridge also have salsa, were there vegetables? if so  what kind? It would seem as a trip to the grocery store was in place. Everyone still did't know what was going on but as I started to leave I simply turned back and said "tacos" No Experience Need- It doesn't take a fancy culinary degree to put together creative tacos ideas that manifest in your head. I recommend you lead from stomach and listen to what it is trying to say. Although I suggest you don't begin thi...

Tacos Nations

Taco'ing to Strangers CEDAR CITY, Utah --This past Tuesday, I gathered a diverse group of student with different cultural background to experience one of Cedar City's best local Mexican restaurants called Lupitas. One of the best things about SUU is the cultural diversity that gives this place a worldly energy. A place that no matter your cultural background you can find your place among caring and supportive community members. If just for a moment you feel lost, there is someone their to walk this new path with you and guide you. Its part of the reason I chose Taco Tuesday as a way to guide anyone who walking alone in the unknown to a place of the known. At first Taco Tuesday was just another reason to eat tacos like Cinco De Mayo or Quinceneras. It was a reason to meet up with friends and spend pocket change on delicious tacos. Even though Taco Tuesday has a catchy ring to it and that would be the preferred day to grab some tacos but a lot of people have busy work da...

Tacos Take over Tuesday

Tacos Take over Tuesday EL Taco Tamer - My skin may brown but don't get it twisted. You can say the first part of my life was the stereotype of an immigrant that came here from Mexico. My family was homeless for the first four years of my life, so finding food was always challenge. Don't start crying now because surviving that part of my life was just the beginning of my struggles. On paper my name is Nestor Zapata but you can call me El Taco Tamer. I was born in Villermosa, Mexico but I was raised in Oceanside, California. Despite struggling to find food, tacos was never out of the questions when we had the ingredients to make tortillas because you could all sorts of tacos as along as you had tortillas. As a matter of fact those first years of my life consisted of rabbit and squirrel tacos because that was the only available protein around our tent in the forest. Besides tacos playing a role in American culture its has been a vital part of my life and a major contribution...
